AGING:  time of 24 months in french oak barrels, then aging in steel conteiners and bottling.

FOOD PAIRING: starters of medium and aged pecorino cheese and Cinta Senese cold cuts, lasagna or polenta with meat ragout, handmade pasta like pappardelle with truffle sauce, game meats, grilled Fiorentina steak, beef fillet with porcini mushrooms or truffle, roast pork meat.
