APOSTOLI: one of the oldest vineyards in Montepulciano, grafted from a vineyard planted in aristocratic times, it is located in a small piece of land facing south under the monastery of the 1400 “Apostoli”.
GRAPES: Sangiovese called in Montepulciano “Prugnolo gentile”, black Canaiolo, Colorino, Mammolo. From the best selection of grapes in our vineyards we produce vino Nobile di Montepulciano riserva.
AGING: vino Nobile riserva is kept 2 years in large barrels of Slavonian oak and then 1 year in Slavonian oak barrels/tonneaux plus one year of aging in bottle before being sold.
FOOD PAIRING: mature pecorino cheese and goat cheese, Cinta senese cold cuts, handmade egg pasta with meat sauce like a chianina beef ragout or a wild boar one, game meat in general can perfectly pair with it either as a pasta dressing or a pot roast, a classic Fiorentina t-bone steak (rare would be the choice in Tuscany!), roast lamb, pork or beef. The same pairings are valid or just enjoy a glass on its own to appreciate its balance and depth, perhaps with some 75% dark chocolate.
