AGING: 1 year of maturation in cement barrels.
FOOD PAIRING: Tuscan pork cold cuts and medium-aged pecorino cheese, pasta with meat ragout and also vegetable sauce, Tuscan soups like “ribollita” and cannellini bean soup, grilled meat such as chicken and pork. It can be easily matched with a whole meal and surprisingly with fish: taste it with a seafood soup called “cacciucco”!
