AGING: vino Nobile riserva comes to life and ages 2 years in large Slavonian oak wood, then 1 year in Slavonian oak barrels and french oak tonneaux plus 1 year in bottle before being sold.
FOOD PAIRING: mature pecorino cheese and goat cheese, Cinta senese cold cuts, handmade egg pasta with meat sauce like a chianina beef ragout or a wild boar one, game meat in general can perfectly pair with it either as a pasta dressing or a pot roast, a classic Fiorentina t-bone steak (rare would be the choice in Tuscany!), roast lamb, pork or beef.
