ASCIONE: from the best selection of Sangiovese called in Montepulciano “Prugnolo gentile” of different vineyards, in order to obatin a very structured wine but at the same time smooth and elegant likely to age for a long time in bottle, very balanced, produced only when we have excellent vintage. Limited production of about 1000 bottles per year.

AGING: this vino Nobile riserva “Ascione” ages 1 years in large Slavonian oak barrels, and then 1 year in the slavonian oak barrels/tonneaux, and then a year in the French oak barriques/tonneaux (tot. 3 years aging) plus 2 years of aging in bottle before bein sold.
FOOD PAIRING: mature pecorino cheese and goat cheese, Cinta senese cold cuts, handmade egg pasta with meat sauce like a chianina beef ragout or a wild boar one, game meat in general can perfectly pair with it either as a pasta dressing or a pot roast, a classic Fiorentina t-bone steak (rare would be the choice in Tuscany!), roast lamb, pork or beef. The same pairings are valid or just enjoy a glass on its own to appreciate its balance and depth, perhaps with some 75% dark chocolate.
